Sweet taste characteristics
Neotame has a pure sweet taste.
When used to replace some sweeteners in ordinary or sugar-free beverages,
not only can products with appropriate sweetness and flavor be obtained,
but neotame also has the characteristic of reducing product costs.
The research results show that in beverage products,
neotame can replace 25% of nutritional sweeteners or high-intensity sweeteners
while maintaining similar sensory characteristics.
Neotame, like sucrose, has a pure sweet taste, but it has a lingering aftertaste.
It can only be evaluated by intuition (the feeling of the tongue).
Stability
Neotame has excellent stability in dry powder form and in powdered finished products.
Under humidity conditions, the stability of neotame is related to PH value,
temperature and time. Neotame is suitable for batch production,
high-temperature short-time (HTST) sterilization and aseptic operation processes.
The concentration of neotame in the final product obtained remains almost unchanged.
Flavor extension
In specific applications and flavor systems, neotame can significantly prolong and
enhance the taste and aroma of products. In the practical application of neotame,
due to its correction and certain flavor characteristics, the product is required to readjust
the flavor system and the content or type of acidulant. In powdered beverages,
adding neotame can reduce the amount of citric acid by at least 20% without
affecting the sourness of the product.
Safety
A large number of research results show that neotame is suitable for all groups of
people, including children, pregnant women, lactating women and diabetic patients.
The use of neotame does not require special indication for patients with
phenylketonuria. Neotame can be rapidly metabolized in the body.
The main metabolic pathway is to hydrolyze methyl ester through enzymes produced
by the human body, and finally generate de-fatted neotame and methanol.
Compared with common foods such as fruit juice, vegetables and vegetable juice,
the amount of methanol produced by the decomposition of neotame is negligible.
For example, the methanol content in tomato juice is more than 200 times that of
beverages containing neotame. Neotame can be completely excreted from the
body through urine and feces and will not accumulate in the human body.
