
Neotame, with the chemical name: N-[N-(3,3-dimethylbutyl)-L-α-aspartyl]-L-phenylalanine-1-methyl ester, is a white crystalline powder, containing approximately 4.5% crystalline water. It is a functional sweetener. It has a pure and harmonious sweet taste, very close to aspartame, without the bitter and metallic tastes often found in other strong sweeteners. Its sweetness is 7,000 to 13,000 times that of sucrose and 30 to 60 times that of aspartame. It has almost zero energy value. It remains stable under instantaneous high-temperature conditions. In cake production, after being baked at 450°C, 85% of neotame still exists.
