Application
Lactase is mainly used in the food
industry to convert low-sweetness and low-solubility lactose into
sweeter, more soluble monosaccharides (glucose and galactose); it can be
used in ice cream, concentrated milk, and evaporated milk. The
possibility of lactose crystallization is reduced, and sweetness is
increased at the same time.
