Vanillin isobutyrate is an important food additive. It appears as a colorless to slightly yellow liquid or solid and emits a sweet vanilla aroma along with a faint fruity scent.
In the food field, it is mainly used in barbecued food, roasted meat, and various meat products. It can add an appealing fragrance to food, making barbecued and roasted meat emit an appetizing unique aroma and enhancing the richness of meat product flavors. For example, when making roasted chicken, adding an appropriate amount of 2,4-Decadienal can make the chicken’s aroma closer to that of traditionally charcoal-roasted chicken; when processing meat products such as beef jerky, it can also improve the overall flavor of the product and make it more attractive.
